White chocolate and mascarpone ganache with an espresso and savoiardi centre, finished with cocoa.
Ingredients
Shell: almond flour, icing sugar, sugar, egg white, colouring, espresso.
Filling: white chocolate, whipping cream, mascarpone, unsalted butter, gelatine.
Centre: white chocolate, espresso, glucose syrup, savoiardi biscuits.
Finish: cocoa powder.
